Chicken, Roasted Vegetable, and Rice Melody

Simple, tasty, and healthy- the three main adjectives that should go into making any meal. This meal is just that, plus some if you ask me. Usually it's the meat that is the main dish, but in this meals case I think that the roasted vegetables take the cake.

It took me a total of 40 minutes to make, only because roasting the vegetables take 30. The prep work was minimal, as well as the clean up. Therefore, this is a great meal to make if you are rushing to or from somewhere, or just don't feel like making dinner a whole to-do.

For the main dish
Roasted Vegetables:
- Broccoli
- Carrots
- Peppers (I used red, yellow, and orange)
- Celery (yes celery! It adds a sweetness to the mix)
- Kale (I love the crunch from roasting it, plus it's packed with vitamins)
- Could also add cauliflower and yellow onion, but we just didn't have any in the house :/
- 1 table spoon garlic olive oil
- 1 table spoon apple cider vinegar. This adds the sweetness and really makes this dish stand out. Plus, there are no extra calories, fat, sodium, etc. so there really isn't anything to lose! You can find it at Trader Joes
- Thyme for taste
- Directions: Chop all vegetables into bite size pieces and mix all together in a large mixing bowl. Add in the garlic olive oil and the apple cider vinegar, as well as the thyme (I used about 3 pinches). Cook in a baking pan with foil and cooking spray at 350 degrees for 30 minutes. Be sure to stir accordingly!

I had chicken and a DELICIOUS rice mix on the side (I included a picture of it, I highly recommend going to Trader Joes and getting it. It microwaves in 3 minutes so it's also easy to make)

I also suggest having the Eric Church station on your pandora while preparing the meal. Also, your border collie at your feet discussing your days together. Actually, more like you talking to him while he has his ears up and cocking his side from side to side like he really is trying to understand exactly what it is that you are saying... Don't you just love dogs and their funny quirks?
